Make up a batch of Syn Free Breakfast Potatoes to enjoy with your bacon and eggs in the morning.
When I buy a bag of baby Yukon gold potatoes, these breakfast potatoes just have to be made.
These potatoes taste amazing and they are one of my favourites. Unlike other potatoes which you want to smother with butter, these really need nothing else but a bit of seasoning. They taste sweet and buttery and are great simply steamed, or roasted or pan-fried.
In this recipe, they are baked on a tray along with some delicious seasoning, peppers, mushrooms and onion for a perfect side for any breakfast.
One of the beauties of these Breakfast potatoes is that you can totally bake it all up at the beginning of the week and then just heat it up in the mornings, even in a pan or popping in the oven until warmed through.
What you then serve it with is entirely up to you. I like eggs, sausage or bacon, grilled tomatoes and baked beans. When I am happy to use a few more syns I serve with some mashed avocado and perfectly cooked sunny side up eggs - heavenly!!

Although I call these syn free breakfast potatoes, they really would be great as a side dish to any meal of your choice and of course, they are both gluten and dairy free.

Syn Free Breakfast Potatoes
Yield: SERVES 4

Cook Time: 45 minutes
Total Time: 55 minutes
Delicious traybake of seasoned potatoes with peppers, onions and mushrooms, perfect for breakfast or a side dish
Ingredients
- 680g (1.5lb) of baby golden potatoes, chopped (leave skin on)
- 1 teaspoon of paprika
- 1 teaspoon of sea salt
- ½ teaspoon of smoked paprika
- ½ teaspoon of onion powder
- ½ teaspoon of oregano
- pinch of black pepper
- 1 red onion, diced
- 6 mushrooms, diced
- 1 red pepper, diced
- 1 green pepper diced
- ⅓ cup (80ml) of chicken or vegetable stock
- 3 spring onions, sliced
- cooking oil spray
Instructions
- Preheat oven to 220c/425f
- Add the potatoes to a large bowl with the paprika, smoked paprika, oregano, onion powder, salt, pepper and a spray of cooking oil spray.
- Add in the peppers, red onion and mushrooms and toss again.
- Spread out on a large baking tray lined with parchment paper, pour over the top the stock and then with some more cooking oil spray.
- Place in oven and bake for 45 mins.
- Top with the chopped spring onion for the last 10 minutes or cooking time.
- Serve with your choice of other sides for a delicious Breakfast dish.
