I love that I can get a perfect baked potato – one with a soft center and oh so slightly crispy skin on the outside – in such a short time! So my friends, I have a way to turn that amazing baked potato into a hearty meal that everyone enjoys.

These delicious enchilada stuffed baked potatoes are so scrumptious, yet so quick and easy! They are truly a perfect meal for a busy weeknight. I am thrilled that I can have these on the table in minutes and my family loves that they can add the their favorite toppings too.

Air Fryer Enchilada Stuffed Baked Potatoes Recipe

To make them, I begin with my air fryer baked potato. Remember that it takes about 30 minutes depending on the size of your potato in the air fryer.

While this recipe is quickest with an air fryer, if you don’t have one, you can use my Perfect Baked Potato recipe. Then once your potatoes are done, just continue to with this recipe. You’ll then have to heat the stuffed potatoes topped with cheese in the oven if you don’t have an air fryer.

How to Make Enchilada Stuffed Baked Potatoes

Once my potato is cooked through in my air fryer, I split open my baked potato and then begin to load it with all of the delicious enchilada fillings that my family loves.

For a Vegetarian Enchilada Stuffed Baked Potato – use black beans, my homemade enchilada sauce, corn, and cheese.

For a Meaty Enchilada Stuffed Baked Potato – You can add in browned ground beef, shredded chicken, or your favorite enchilada ingredients! The options are endless, so let everyone create the stuffed baked potato of their dreams!

Here’s a helpful tip….When stuffing the baked potatoes, I like to leave them in the basket of the air fryer instead of transferring them back and forth.

First, I add drained and rinsed black beans and then the corn. I then top with the enchilada sauce, and top with cheese.

Once I have all of the ingredients loaded into my enchilada baked potatoes, I close my air fryer and set the timer for 5 minutes at 390º Fahrenheit just to heat all of the ingredients all the way through and melt the cheese.

To make this recipe even quicker, you can make my delicious Enchilada Sauce ahead of time and have it ready to go in the refrigerator. You can also make my Blender Enchilada Sauce recipe, which is ready in just a few minutes! I absolutely love my homemade enchilada sauces – they just taste so much better on everything I serve with them!

  • 4 medium air fryer baked potatoes
  • 1 (15-ounce) can black beans, drained and rinsed
  • 1 cup frozen corn kernels
  • 1/2 cup enchilada sauce
  • 1/2 cup pepper jack cheese

Instructions

  • Split open the cooked air fryer baked potatoes and fluff the inside of the potato with a fork. Spoon in black beans, corn, and enchilada sauce adn top with cheese.

  • Close air fryer and set temperature for 390º F and set the timer for 7 minutes to heat all of the ingredients and melt the cheese.

  • Remove from the air fryer and serve.
